1. Rinse the ribs and cover with cold water. Put on the fire, bring to a boil, remove the foam and cook the broth on low heat for 30 minutes.
2. Peel the potatoes, cut into cubes and add to the broth. Cook for 10 minutes. Then add the pearl barley and cook for another 20 minutes.
3. Peel and finely chop the onion. Peel and grate the carrots on a coarse grater. Cut the cucumbers into cubes.
4. Heat the frying pan, pour in vegetable oil. Put in the onion and carrot. Fry over medium heat, stirring, for 3-4 minutes. Add tomato paste and cucumbers. Simmer over medium heat for 5 minutes.
5. When the pearl barley is ready, add the fried vegetables and ribs. Salt and pepper to taste, add bay leaf and herbs. Cook the rassolnik for another 5-7 minutes over low heat.
