What is granite

Granita is an Italian frozen dessert made from water, syrup and fruit.

The consistency of granita is similar to snow and ice, and its taste can be anything, but citrus is considered the most refreshing.

How to cook

To make lemon granita, you need lemon juice, syrup, water, sugar and fresh mint.

Here is a step-by-step instruction.

1. Use a vegetable peeler to remove the lemon zest and set it aside for garnish and syrup.

2. Squeeze the lemon juice by hand or with a juicer. You will need a cup of lemon juice to make the granita.

3. Start making the syrup. Take 3 cups of water, 1 cup of sugar and lemon zest.

4. Place all ingredients in a saucepan and cook until the sugar melts and the mixture boils. This will take no more than 5 minutes.

5. After boiling, remove the pan from the stove and leave the syrup to cool for 15 minutes.

6. Strain the finished syrup through a fine sieve, add lemon juice and beat with a blender.

7. Pour the prepared mixture into a baking dish and put it in the freezer. Here the sweetness should spend at least 45 minutes.

8. Now the granita base should be broken into small ice with a fork or whisk, repeating the process every 20 minutes.

If you've done everything correctly, the texture of the dessert will resemble frozen sorbet or lemonade.

Serve the lemon granita in a glass, garnished with zest and fresh mint.
