How to cook grilled vegetables in the oven: a recipe for those who don't have a dacha

A dacha in the spring means shashlik and grilled vegetables. But getting a house in a gardening community for this purpose is not the smartest decision, especially since many of these dishes can be cooked at home in the oven.

We'll tell you how to cook grilled vegetables in the oven.

Prepare the marinade

For meat or vegetables, the main thing in this case is a quality marinade. Vegetables do not require many ingredients:

  • salt;
  • lemon juice;
  • vegetable oil.

Salt is taken to taste, and liquid ingredients are mixed in a ratio of 1:3. You can marinate eggplants, zucchini, and bell peppers this way. If the recipe includes tomatoes, they will taste better if you marinate them in the same composition, but without lemon juice. The vegetables will be ready for cooking in 15-20 minutes.

Grilled vegetables in the oven

In addition to vegetables, you will need an oven and a grill in it. It is important that there is an option to cook in the "grill" or "convection" mode, which are available in every modern oven.

Zucchini, courgettes and eggplants are cut into round medallions 1.5-2 cm thick.

Tomatoes are cooked whole, and bell peppers are cut into flat quarters.

Before placing the vegetables on the grill, it must be greased with vegetable oil, the oven must be heated to 180 degrees. After that, you can bake the vegetables. 20-30 minutes - and everything is ready.
