Usually we are talking about vegetable oil. But some gourmets prefer to fry nightshade in lard or margarine.

But which option is the best? In which case will the dish acquire a beautiful crust, ideal consistency and bright aroma?

And if you choose vegetable oil, what kind should you choose?

The best option

The side dish will be as delicious as possible if you cook it in refined sunflower oil.

The dish is unlikely to burn. In addition, there will be no problem with the release of hazardous compounds.

Other options

The dish will also be incredibly appetizing if fried in lard. But you should keep in mind that the side dish will be more harmful and caloric.

A good option is to heat-treat potatoes in an oil mixture - “vegetable + butter”.

But you shouldn’t use only butter to cook fried potatoes: it will start to darken and smoke too early.

Margarine is also difficult to call a preferred option for similar reasons. In addition, when heated, this product can become a source of dangerous compounds.

As for olive oil, not all of its varieties are suitable for heat treatment.
