This is how herring was salted back in the USSR: the fish turns out spicy and tender

For the preparation of spicy salted herring, a separate GOST was developed in the USSR, which became a kind of ideal for modern chefs.

Now many housewives salt herring using this recipe.

Ingredients:

  • fresh frozen herring – 0.7 kg;
  • water – liter;
  • sugar – 20 g;
  • cloves – 2 pcs.;
  • black peppercorns – 0.6 g;
  • nutmeg – 0.2 g;
  • bay leaf – 0.15 g;
  • ground cinnamon – 0.6 g;
  • dry coriander – 1.05 g;
  • dry mint – 0.15 g;
  • allspice – 1.9 g;
  • dry chili pepper – 0.25 g.

Preparation

1. The choice of herring is important. It is necessary to use undamaged fish. First, the carcass should be washed with running water.

2. Another important moment is to prepare the required amount of spices. The proportions are precisely verified by Soviet cooks, so all that remains is to mix the required amount of spices.

Then add salt and sugar to the spices - 1 teaspoon each without a slide. The same amount of salt is mixed with water.

3. The herring is cut from tail to head, the entrails are removed. Glassware is used for salting.

4. The spices are poured into a plastic bag and the fish is put there too. This makes it easier to rub the herring with the seasoning.

5. Next, fill the fish with salted water and put it in the refrigerator. After 3 days, you can taste it.
