Shashlik and grilled dishes are associated exclusively with meat. However, grilled vegetables are no less original, but also healthy.

You just need to marinate them deliciously and correctly, and then the culinary world will seem even more colorful and spacious.

Chefs assure that grilled vegetables are good even without marinade. But anyone who is offered vegetable shashlik instead of meat will find it difficult to decide on such a change without marinade.

To prepare you will need:

  • olive oil;
  • balsamic vinegar;
  • rosemary (dried is fine);
  • garlic;
  • salt and pepper.

How to cook

The amount of ingredients depends on the amount of vegetables that need to be prepared for heat treatment. Spices are added exclusively to your taste.

The calculation is based on a proportion of 50-100 grams of vegetable oil per 1 kg of vegetables.

Mix the ingredients and leave the marinade to sit for at least an hour.

Only after this can you dip the vegetables, mix them and then proceed as you wish. You can keep them in the marinade, or you can immediately take them out and put them on the grill.

Don't get carried away with too much vegetable oil and vinegar. If there seems to be little liquid, you can add lemon juice - it will not be as greasy, but no less tasty. You can also use soy sauce, mustard and even honey as a base.

And in order to marinate vegetables, as they say, quickly, you need to mix them in a bowl with vegetable oil, salt, herbs, place them in a plastic bag, shake and leave for 10-15 minutes.
