Pancakes are considered one of the oldest dishes in Russian cuisine; among other things, they are a traditional dish of the equally ancient Slavic holiday – Maslenitsa.
Here is one of the little-known recipes from the century before last – royal pancakes.
The butter needs to be melted and mixed clockwise with the egg yolks. When ready, add sugar and beat everything with a mixer until foam forms and leave to cool.
Next, bring the cream to a boil and sift in the flour in small portions, constantly stirring the mixture.
After stirring, remove the mixture from the heat and allow to cool.
After the two components have cooled, mix the egg-butter mixture with the butter-flour mixture, add another ½ cup of whipped cream and mix.
Bake the pancakes in a preheated frying pan over medium heat.
After removing from the frying pan, sprinkle the pancake with powdered sugar, sprinkle with lemon juice and serve.
