People who observe Lent often do not know what to cook to make the dish as tasty as meat. Or even tastier.
The easiest way to imitate the taste of cutlets is because the meat can be replaced with another product, and you can add many ingredients to the minced meat that will make lean cutlets better than regular ones.
1. Legumes (beans, peas, chickpeas, lentils) are an excellent alternative to meat. They are not only tasty, but also as nutritious as meat. The only difficulty is that legumes need to be soaked first and then boiled for a long time. And only then can they be minced. The exception is lentils, which cook very quickly.
2. Add meat seasonings. The smell of garlic and meat seasoning will create the feeling that this is a "real" cutlet.
3. Add pre-fried onions to the mince. It will make the dish tasty and aromatic. Also, excess moisture evaporates during frying. As a result, the cutlets hold their shape better and do not fall apart in the frying pan.
4. Vegetable mince usually has a lot of liquid. Oatmeal absorbs it well. Also, cutlets with oatmeal have a taste that is as close to meat as possible. An excellent option is cutlets made from flakes and raw potatoes, mixed 1:1.
5. You can choose some unusual recipe. The dish will not imitate meat, but it will be very tasty in itself.
Lenten cutlets are prepared from vegetables, cereals, legumes. These can be zucchini, cabbage, potatoes, pearl barley, rice, buckwheat, etc.
If you want something original, you can make carrot cutlets. This option has an unusual taste.
Grind two medium carrots, two cloves of garlic and a small handful of walnuts in a blender or mince. Add salt and seasoning to taste. To make the mixture more uniform, you can add starch or flour (about 2 tablespoons). Form small cutlets, roll in breadcrumbs and fry until golden brown in vegetable oil. Turn carefully, as the mixture is eggless and therefore very tender.
The combination of walnuts and carrots gives the cutlets an unusual taste. This is a good opportunity to diversify the Lenten table.
The main problem with lean cutlets is that the non-meat mince does not stick together well due to the lack of protein, causing the cutlets to fall apart. So don't make them big.
