Beets are usually used to prepare salads or first courses. Less often, the vegetable is baked and eaten as a side dish.
There is another recipe that will be remembered for a long time and will help out those on a diet or observing a fast. These are beetroot cutlets with rice and beans.
Beets should be boiled in the usual way or baked in the oven (in foil or in a sleeve).
Once the root vegetable has cooled down, it needs to be peeled and grated on a fine grater.
Peeled nuts should be crushed into crumbs, mixed with beets. Grind beans in a blender to get a thick puree.
Mix together the bean puree, boiled rice, grated beets and spices.
Knead until smooth; if the mixture is too liquid, you can add flour.
Form cutlets and fry in a preheated frying pan with vegetable oil or bake in the oven.
