Firstly, vegetables are peeled immediately before cooking to preserve maximum benefits.

Cooking a stew without water
When chopping vegetables (except garlic and onions), do not cut them into small pieces. Then the ingredients (except tomatoes) should be fried until lightly browned and transferred to a bowl.
Garlic is cut into slices, onion to taste. Heat vegetable oil in a frying pan, add aromatic herbs, then onion and garlic, fry for 15 minutes, stirring constantly.
Then the fried vegetables are added to the pan.
Add pepper and salt, coarsely chopped tomatoes, fry for 30 minutes on low heat, covered with a lid.
Before serving, add lemon zest and whole basil leaves, stir, cook for another minute and turn off the heat.
