By the time autumn falls on the earth, the horseradish rootstock accumulates a large amount of sugars. Because of this, its taste is not as strong as that of the horseradish that was dug up at the beginning of the season.

It is best to start this procedure between the end of October and the end of November.

However, the main guide should be the climate of the region where the horseradish is grown and the weather forecast - you must make it before the snow falls.

The best solution is to wait and watch the horseradish. As soon as you see that the above-ground part of the plant has begun to turn yellow and fall to the ground, start harvesting.

This way you will be able to obtain the juiciest rhizome.
