After heating, the taste of coffee changes – it becomes more bitter.
The chlorogenic acid in the drink breaks down, resulting in the formation of quinic (found in tonics) and coffee acids. This process changes the taste of coffee.
But if necessary, you can heat up the coffee in the microwave.
Here the drink will heat up faster, which means the taste of the coffee will hardly change. But this should be done no more than to 60 degrees Celsius.
If you heat coffee to a high temperature, the aroma will change along with the taste.
Therefore, it is better to keep coffee in a thermos or a thermal mug.
