Vareniki, as we know, symbolize a well-fed and rich life, but this is not the only reason why they should definitely be on the table set for the Old New Year.
The whole point is that this dish is perfect for fortune telling.
Each filling has its own meaning: sugar means happiness and well-being, salt – trials and difficulties, pepper – changes in life, dill – good health. A coin that you find foretells wealth, and a ring – a wedding.
So we offer you a recipe for classic potato dumplings: just add some surprises to them and find out what awaits you in the new year.
To prepare the dough and filling you will need:
- 200 ml of water;
- 350 g flour;
- 0.5 teaspoon salt;
- 1 tablespoon vegetable oil;
- 300 g potatoes;
- 2 eggs.
To make vareniki, you first need to make the dough. To do this, beat the eggs with salt and water, then gradually add flour, stirring constantly. The resulting dough should be very dense, then the vareniki will hold their shape well.
While the dough is resting, prepare the filling. To do this, wash and boil the potatoes in salted water until done, about 15-20 minutes. Drain the water and mash the potatoes with a fork until smooth, do not forget to add salt and pepper.
Now you can start forming the dumplings. Roll out the dough into a thin layer and cut out circles using a glass or a special form.
Place 1-2 tablespoons of mashed potatoes in each circle and fold the edges of the dough to form a dumpling. Don't forget the extra "add-on" for fortune telling. Press the edges tightly so that the filling doesn't leak out during cooking.
You need to cook the dumplings for about 5-7 minutes in hot water – until they float to the surface.
