Chicken hearts and gizzards are affordable products that can be purchased at a reasonable price.
Therefore, brawn prepared from chicken offal is not only an amazingly tasty, but also a very budget-friendly dish.
Let's not beat around the bush: for chicken offal headcheese you will need:
- 0.5 kg chicken hearts;
- 0.5 kg chicken stomachs;
- 1 carrot;
- 1 onion;
- 5 cloves of garlic;
- 30 g gelatin;
- 6 black peppercorns;
- 2 bay leaves;
- salt – to taste.
Please note: the recipe calls for the same amount of hearts and stomachs, but you can diversify the dish by including liver and fillet.
First, clean the offal, rinse it, add water and cook. Don't forget to remove the foam during the process.
When the water boils, place the peeled vegetables in the pan: onion, carrot and garlic. No need to chop them.
Reduce the heat and cook all the ingredients for 1-1.5 hours, and 15 minutes before it’s ready, add salt and spices.
Wait until the offal cools down, then cut it into strips. The broth needs to be strained and gelatin added (at a rate of 30 g of thickener per 1 liter of broth), then stirred and heated for 5-7 minutes.
Now you can assemble the headcheese. To do this, the hearts and stomachs need to be placed in a form lined with cling film, and then filled with broth.
Cover the future snack with the same cling film and put it in the refrigerator until it hardens completely.
