Potato soup may seem boring and ordinary. But in autumn, soups are the best way to warm up.
Here's how to make a delicious, rich, warming and unusual potato soup for the autumn weather.
You will need:
- potatoes (medium) - 7 pcs.;
- vegetable broth - 2 l;
- vegetable oil - 1 tbsp;
- onion - 1 pc.;
- garlic - 4 cloves;
- curry - 1.5 tsp;
- turmeric - 1 tsp;
- cumin - 1 tsp;
- salt to taste;
- pepper: red, cayenne, black, to taste;
- coconut milk - 400 ml;
- cilantro to taste.
How to cook
1. Heat the oil in a saucepan over medium heat, add peeled and chopped onion and garlic.
2. Simmer for 5-7 minutes until translucent. The onions should not brown.
3. Add spices, peeled and diced potatoes. Cook for 5 minutes, stirring.
4. Add the broth and cook over high heat until it comes to a boil, then simmer the soup over low heat for 20-25 minutes.
5. Add coconut milk, cook for 5 minutes and serve, garnished with cilantro.
