It's rare to find a cucumber recipe that doesn't include such important ingredients as vinegar and sugar.
However, it is quite possible to do without them.
It is worth noting that thanks to this recipe, the vegetables will be as tasty as if they were cooked in a barrel.
The recipe may seem a little complicated, but the result will pleasantly surprise you.
How to make cucumbers without vinegar and sugar
First, you should take large jars (three liters) and put greens (currants, cherries, horseradish, dill) on the bottom and start adding cucumbers.
When you fill the container 50%, it's time to add some more greens.
Then we fill the jar. There is no need to tamp the cucumbers - they can lie quite freely. Next, we prepare the brine. The recipe is quite simple: 60 grams of salt per liter of liquid, boil and pour over the cucumbers.
It is advisable to place a container under the jars with cucumbers in case the brine spills out. Put the lids on top and wait 48 hours. During this time, our preparations should lose their aesthetic appearance: this is normal.
If you notice that the cucumbers with brine still look decent, then they need to be moved to a warmer place for at least another 24 hours.
Afterwards, you need to remove the resulting foam. Also, add two spoons of mustard powder to each jar and wait 24 hours.
When the time is up, you need to pour the liquid into a basin and turn on the stove. When it starts boiling, you should watch for foam and quickly remove it.
The liquid needs to be thermally processed for at least ten minutes. But the greens need to be left the same as they were. Now you need to roll up the cucumbers in sterilized jars with lids. Leave the brine the same.
