The zucchini needs to be peeled (if necessary), grated on a coarse grater and fried in a frying pan with vegetable oil.
You can add any spices you like. Fry the vegetable over low heat.
When the water boils, you need to cook the noodles in it. The recipe calls for buckwheat soba.
