Usually, lightly salted cucumbers are prepared not for storage, but for consumption.
There is a recipe that allows you to prepare crispy lightly salted cucumbers that will be stored all winter. It is interesting to a Russian person only because lightly salted cucumbers are closed with vodka.
To prepare you will need:
- fresh cucumbers (for a 3-liter jar);
- water;
- salt (about 60 grams);
- vodka (60 g);
- garlic and herbs to taste.
How to cook
Fresh cucumbers should be washed and left in a container with cold water for 3 hours.
Place greens and garlic on the bottom of a clean jar. These can be horseradish, currant, oak, cherry leaves, dill umbrellas, etc. Then add cucumbers.
Prepare the brine. To do this, bring the water to a boil, add salt and vodka.
Pour hot brine over the vegetables in the jar, cover the neck with gauze and leave for 12 hours at room temperature.
Then we close it with a nylon lid and put it away for storage in a cool place.
The cucumbers will be ready in a few days and can be stored in a cool place all winter long.
