What to cook from young nettles: 2 dishes to choose from

Gardeners and fans of traditional medicine know that many weeds are not weeds at all, but a natural storehouse of vitamins and nutrients.

There are legends about nettles alone. They are actively used as fertilizers, in folk crafts, and also used to make soups and prepare other healthy dishes.

Here are some recipes.

1. Young nettle salad

Ingredients:

- young nettles (fresh or frozen) - 200 g;
- cucumbers - 1-2 pcs.;
- radishes - 5-6 pcs.;
- green onions - 3-4 feathers;
- lemon juice - 0.5 tbsp;
- salt - to taste;
- ground black pepper - to taste.

Preparation

Wash the nettles, remove the stems and leaves with tough veins.

Cut cucumbers and radishes into small cubes.

Chop the green onions.

Mix all ingredients in a large bowl.

Add lemon juice, salt and pepper to taste.

Mix the salad and serve.

2. Young nettle soup with egg

Ingredients:

  • young nettle (fresh or frozen) - 400 g;
  • potatoes - 3 pcs.;
  • carrots - 1 pc.;
  • eggs - 2 pcs.;
  • water - 1.5 l;
  • vegetable oil - 2 tablespoons;
  • fresh dill - 1 bunch;
  • salt - to taste.

Preparation

Peel the potatoes and carrots and cut into cubes.

Heat oil in a saucepan and fry carrots until golden brown.

Add potatoes and fry everything together until half cooked.

Chop the nettles and add to the pan.

Cover with water and cook until the potatoes and nettles are ready.

Beat the eggs in a bowl and pour into the soup.

Cook the soup for another 1-2 minutes and remove from heat.
