Mashed potatoes are a delicious side dish that goes well with a variety of meat and fish dishes and vegetable salads.
But the treat can be made much tastier if you prepare a sauce for it.
Ingredients
- 700 g meat bones;
- spices and salt to taste;
- 1 tbsp cooking fat;
- 2 tsp sugar;
- 2 tbsp. wheat flour;
- 2 tbsp butter;
- 100 g tomato puree;
- 2 onions;
- 1 carrot;
- parsley.
How to cook
First, you need to cook a strong bone broth.
The onion should be diced and the carrots should be grated. All this should be fried with bones and parsley.
Then place the bones in a saucepan, do not use the melted fat. You will have to cook them on low heat for 10 hours. The fat should be removed periodically. In the end, all that remains is to strain the liquid.
Then you need to sauté the flour in cooking fat until it turns brown, and then you need to dilute it with the strained broth.
Separately, fry the carrots, onions and parsley with the addition of tomato puree.
Then all the ingredients need to be combined in a frying pan and brought to a boil, and then cooked for another hour on low heat. At the end of cooking, sugar, salt and pepper are added to the sauce.
The sauce is strained and the vegetables need to be mashed. After that, you can add the dressing to the mashed potatoes.
