It happens that cooks freeze vegetables for the winter, but do not know what to cook from them. One such sad example is eggplant.
We will tell you what you can do with some vegetables, cereals and meat on hand. The recipe is simple and will not take much time even for a beginner.
To prepare you will need:
- meat (beef, chicken breast, pork);
- 300 g ground paprika;
- spices: cumin, pepper, salt to taste;
- 1 tbsp vegetable oil;
- 1 eggplant;
- 2 cloves of garlic;
- 1 avocado.
How to cook
First, cut the eggplant and meat into strips. The meat should be thinner, and the eggplant can be larger.
Chop the garlic with a knife. Peel the avocado, remove the pit, cut the pulp into cubes, put it in a bowl, and add salt. You can add lemon juice to taste and desire.
Salt the meat, add spices, vegetable oil, mix and fry in a heated frying pan with vegetable oil for 2-4 minutes.
When ready, transfer to a bowl and begin frying the eggplants (4-5 minutes).
Then add meat, garlic, stir and heat for a couple of minutes.
Now you can remove from heat, add avocado and serve with a side dish – rice or vegetables are best.
