It won't rot, but it will shrivel and sprout: this is where you shouldn't store beets in winter

Beets can remain juicy and fresh until spring, but under certain conditions.

There are places where it is better not to store the root crop in winter, otherwise the fruits will shrivel and sprout.

Many people keep beets on the balcony in winter, but this may be a mistake. The nuance is that the root crop needs a temperature of 0 … +3 °C.

On the balcony it is either below zero degrees or above +5 °C. The required temperature is almost never there, so the conditions for beets are not the best there.

On a glazed balcony, +3 °C only happens when there are severe frosts of -15 °C outside.

But they don’t last all winter; warming quickly sets in, so the temperature on the balcony soars to +7 …+10 °C.

Defrosted beets lose some of their nutrients and become less firm and juicy.

If the temperature on the balcony is above normal, then there is a high probability that the root crop will sprout in a very short time. In a couple of weeks, the vegetable will become soft and limp. Such beets will not be able to be stored until spring, so you will have to use them for their intended purpose.
