The pH of a solution with a concentration of 12.9 grams per 1 liter is 1.3.
However, consuming oxalic acid in excess amounts can have negative consequences.
For this reason – for safety reasons – malic acid was elevated to first place in terms of sour taste strength.
Its pH level can range from 1.9 to 2.2 – the exact value depends on the purity and quality of the synthesis.
In the register of food additives, malic acid is listed under the “code name” E 296.
It is used as a preservative and also as a flavoring additive.
If you have ever tried fizzy candies, or any other very sour candies, you are probably familiar with this product - they add malic acid to them.
