In such weather, the sugar content in cabbage increases, the bitterness goes away. That is, the cabbage becomes more delicious.
However, it is important to remember that even at -5 degrees the cabbage can freeze, and frozen heads of cabbage do not store well.
It is also extremely important to harvest cabbage in clear, dry weather. Cabbage harvested in the rain must be dried before storing.
Frozen, cracked, damaged, or underdeveloped heads of cabbage should not be stored: they will quickly rot.
