If you have ever been to a Soviet canteen, you probably remember a dish called “fried pelmeni”.
The expert of the online publication BelNovosti, chef Yulia Arkhipova, also recalled the past and not only shared the Soviet method of preparing fried dumplings, but also told about the modern version of this dish.
In the canteens, yesterday's boiled dumplings were fried.
Therefore, if you want to prepare such a delicacy at home, you should first boil the dumplings until done, and then fry them in fat until a golden brown crust forms.
The vast majority of modern cooks do not want to bother with cooking dumplings, so they put them in a frying pan in a frozen form in one layer and wait for a golden crust to appear.
Then the dumplings are turned over and browned on the other side.
After this, they pour in a small amount of water (or better yet, broth) so that it covers the dumplings by a third, reduce the heat and cover the pan with a lid.
After about 5 minutes, when the water has evaporated, the dumplings can be served.
