It is not always possible to fry potatoes without them turning into mush.

Firstly, under no circumstances should you peel potatoes in advance or soak them in water.
The potatoes will be soaked in water and will stick to the pan. Peel, slice and fry immediately.
If the potatoes are too juicy, you can dry them with paper towels before frying.
Secondly, before frying, you need to heat the oil in the frying pan thoroughly.
Carefully transfer the potatoes into the frying pan, smooth out the surface, and do not cover with a lid.
Fry over moderately high heat for 10-13 minutes. During this time, a golden brown crust will appear.
Next, carefully turn the potatoes over with a spatula, cover the pan with a lid, and reduce the heat to medium low.
Peel and chop the onion, add to the potatoes, stir, cover the pan with a lid, and fry for another 10 minutes.
Add salt 5-7 minutes before it's ready. You can't add salt right away under any circumstances, otherwise it will turn into mush.
