The beneficial properties and taste of pumpkin make it an ideal seasonal food product.
That is why the expert of the online publication BelNovosti on culinary issues, chef Yulia Arkhipova, advises to prepare a real autumn soup with pumpkin and ginger root.
- about 400 grams of pumpkin;
- a piece of fresh ginger root;
- onions and potatoes (one each);
- a clove of garlic;
- a large spoon of vegetable oil and a small spoon of butter;
- bay leaf (a couple of pieces);
- five spoons (large) of couscous;
- salt with coriander;
- greens if desired.
First, combine both types of oil in a frying pan and bring to a uniform state. Fry the onion until golden. Then, using a grater, grind the ginger and add. Add spices with bay leaf.
Add pumpkin and potato cubes, stir, and fry a little.
Add water, stir. After 15 minutes, add salt and chopped garlic. After five minutes, run a blender through it. The soup is ready.
