Here's what delicious things you can make from eggplants, besides the mother-in-law's tongue that everyone is pretty tired of.
Expert of the online publication "BelNovosti" Yulia Arkhipova, a cook and fourth-class baker, told how to prepare a fragrant salad for the winter.
1. Clean eggplants should be cut into 1 cm thick circles together with the skin and sprinkled with salt, then left for 30 minutes. Then rinse with cold water.
2. Peel the tomatoes and remove the seeds from the pepper.
3. Grind the prepared tomatoes together with garlic and pepper into a puree using a blender. Add salt, sugar, oil and vinegar and transfer the eggplants into it.
4. Bring everything to a boil, cook for 30 minutes on low heat.
We pour everything into sterilized jars, roll them up and, once they have cooled, put them away for storage.
