1. Clean eggplants, peel them and cut the flesh into cubes, then add salt and leave for 15-20 minutes.
2. Finely chop the onion and tomatoes.
3. Fry the eggplants until golden brown, place on a paper towel.
4. In the same frying pan, fry the onion over low heat for 10 minutes.
When it becomes transparent and soft, add tomatoes and fry for another 10 minutes.
5. The finished sauce should cool. Add spices and garlic and chop everything with a blender.
6. Add eggplants to the finished puree, let it sit for a few minutes and serve, garnished with herbs. Enjoy!
