How to Cook Zucchini Soup: Light, Hearty and Very Tasty

Zucchini is a versatile vegetable in cooking. They are not only fried, stewed, marinated, processed into caviar, but also preserved in fruit compotes.

Another dish that is not the most familiar to most people is zucchini soup.

Expert of the online publication "BelNovosti" Yulia Arkhipova , a cook and fourth-class baker, told how to make zucchini puree soup with basil.

It will be required

  • zucchini - 700 g;
  • leeks - 250 g;
  • celery (stalk) - 170 g;
  • basil (fresh) - 55 g;
  • garlic - 3 cloves;
  • vegetable oil - 5 tbsp;
  • water - 1.2 l;
  • salt, black pepper (ground) to taste.

How to cook

1. Cut the zucchini, leek, and celery stalks into small cubes. Press the garlic.

2. Pour vegetable oil into a saucepan, heat it and add leeks and celery. Simmer for about 5 minutes, adding oil if necessary.

3. Add garlic, simmer for 30 seconds and add zucchini. Simmer for 1 minute and add basil leaves, salt and stir.

4. Pour in water, bring to a boil, cover the pan with a lid, cook over medium heat for 10 minutes, stirring.

Remove the soup from the heat, blend the contents, add fresh basil, lemon juice and a little olive oil for flavor. Enjoy!
