Eggplants are as popular in cooking as zucchini, but not all housewives know how many delicious dishes can be prepared from eggplants.
This recipe definitely won’t take much time or effort, and the dish will be impressive, tasty, and quite filling.
Expert of the online publication "BelNovosti" Yulia Arkhipova , a cook and fourth-class baker, told how to bake eggplants with cheese and egg.
1. Cut the eggplants lengthwise into two parts, sprinkle with salt and grease with a small amount of vegetable oil.
2. Place them on a baking sheet lined with parchment paper, flesh side down, and bake for 30 minutes in an oven preheated to 240 degrees Celsius.
3. Separate the yolks from the whites (you only need the yolk), chop the eggplant pulp with a fork, grate the cheese, cut the tomatoes into halves.
4. Place a spoonful of tomato sauce, the same amount of grated cheese, tomato halves, and then one egg yolk inside the eggplants.
Place the blanks in the oven for 5 minutes and cook until done at 220 degrees. When ready, sprinkle with chopped herbs and serve.
