Classic pies are prepared quite quickly. But how to make sure that the pies turn out tender and fluffy?

There are several ingredients that can be added to the flour to get great results.

Expert of the online publication "BelNovosti" Yulia Arkhipova , a cook and fourth-class baker, told how to bake pies according to a forgotten recipe.

Baking soda

Adding a small amount of baking soda to flour helps activate the leavening process in the dough.

The baking soda reacts with acids in other ingredients, such as kefir or yogurt, and releases carbon dioxide, which helps the dough rise and makes the pies fluffier.

Baking powder

A leavening agent, such as baking powder or unleavened baking powder, is another important ingredient for making fluffy cakes.

It reacts with the liquid and creates gas bubbles in the dough, resulting in airiness.

Kefir or yogurt

Replacing regular water with kefir or yogurt when mixing the dough also helps to obtain fluffier pies.

Kefir and yogurt contain lactic acid, which reacts with baking powder and baking soda, enhancing the effect and making the dough fluffier.

Eggs

Eggs are another key ingredient for creating the fluffy texture in pies.

They add moisture, protein and fats that help the dough relax and form gas bubbles during baking.

Butter or cream

Adding a small amount of butter or cream to the dough helps make it softer and more elastic, which in turn contributes to fluffiness. Of course, the fat content of the cream and butter should be low.
