Wash the lemon thoroughly under running water, cut it into two halves and squeeze out the juice – by hand or using a special device.
Freshly squeezed lemon juice should be collected in a small container and wine vinegar should be added to it.
Now you should add salt, ground black pepper and dried oregano (you can use Provencal herbs as an alternative – act based on your own taste).
Whisk the mixture, gradually adding olive oil. All that remains is to thoroughly mix all the ingredients until you get a homogeneous aromatic mass.
Taste the dressing and add more spices and salt if needed. You can also experiment with honey and grain mustard – the taste of the Greek salad will only improve.
