First, bread. It increases the amount of minced meat, but makes the cutlets tougher. Also, bread makes the minced meat darker.
Secondly, eggs. They should only be added if bread is added.
Some cooks do not refuse eggs, but use only the yolk.
Thirdly, onion. It interrupts the taste of meat. It is better to add chopped garlic, black pepper, other spices.
