Firstly, you can make the pancakes more elastic by adding one or two eggs to the dough.
Secondly, pancakes will definitely stick and tear less if you add a little vegetable oil to the dough. This is especially true for pancakes made with water.
Thirdly, pancakes often stick and tear due to lack of flour. One or two tablespoons of flour should fix the situation.
Additives such as cinnamon, cocoa and paprika should be used with caution, as they make the dough unpredictable.
And if you add a lot of sugar, the pancakes will burn. It is better to bake unsweetened pancakes and add jam, honey, syrup or condensed milk to them than to pour a lot of sugar into the dough and get sweet burnt cakes.
