To make cottage cheese or cheese, you don't need any special culinary experience. Just wait until the milk turns sour, and then through simple procedures you can get cottage cheese, cheese and whey.
Not everyone knows how to make sour cream at home. But the recipes have survived.
They say that this is what Soviet housewives did.
1. Pour the milk into a saucepan, bring to a boil and let cool to 40 degrees.
2. Beat the kefir with a whisk or fork and pour it into the warm milk.
3. Cover with a lid, a towel, and leave to cool in a warm place.
4. After 7 hours, the contents should resemble thick yogurt.
5. Prepare a colander or sieve by lining it with several layers of cheesecloth. Place it over a bowl or saucepan.
6. The finished mass should be carefully placed in a colander and covered with a towel again. This time, everything should be put in the refrigerator and stirred periodically.
7. After about 8 hours, the whey should drain, and thick sour cream should remain in the colander or sieve.
Beat it with a whisk, if it is very thick you can add a little milk.
Store in a glass container in the refrigerator.
