Cabbage dishes are not the most festive, and there is no need to talk about haute cuisine. The reason for this is the specific smell of the vegetable when cooked and not the most refined appearance.
But this is not a reason to exclude cabbage from your diet, especially when it comes to cauliflower.

1. In a large frying pan with vegetable oil, fry the peeled and sliced mushrooms.
2. Bring 2 cups of water to a boil, add a large pinch of salt and boil the cauliflower. Cook for 10-12 minutes.
3. Peel and chop the shallots, chop the rosemary.
4. When the mushrooms are browned, add the shallots and rosemary to the pan, cook for 2 minutes, remove from heat.
5. Grate the Parmesan and chop the boiled cabbage with a blender, add butter, Parmesan, cook over medium heat, stirring.
You can add water if necessary, but the puree should be thick and loose.
Place the cabbage on plates, top with fried mushrooms and serve. Enjoy!
