Inexperienced cooks perform this procedure, believing that it helps speed up the preparation of cutlets.

At first glance, this approach is correct: the piece of meat becomes flatter and less thick, and the future dish is more “pressed” to the bottom of the pan.

However, in reality, such an action only makes the situation worse.

Why is this a bad habit?

Pressing on the frying cutlets with a plastic, wooden or metal device will result in a deterioration in the consistency of the food.

Meat "washers" lose their softness, juiciness and airiness. The dish becomes too dense and loses its bright taste. In addition, there is a risk of burning cutlets.

Therefore, do not press the spatula on the dish being prepared. This will only spoil it. And it is not a fact that you will cook the dish faster.
