Why an experienced housewife won't use large beets for borscht

At first glance, it may seem that a large vegetable could be an ideal option: just one piece is enough to prepare a large portion of borscht.

However, it is worth choosing a small vegetable.

Large beets are absolutely not suitable for soup, as their color does not hold. As a result, the borscht will turn out orange at best and not so rich in terms of taste.

Even "color fixers" such as lemon juice, tomato paste or vinegar won't help.

But a small beetroot will help you prepare borscht of a very impressive color, which you won’t be ashamed to put on the table.
