Turkish chefs “hide” this original filling in cutlets for taste: not an egg and not butter

Cutlets are prepared in many countries of the world. Minced meat, formed into neat patties, supplemented with spices and vegetables, is loved in Europe, Asia, and America.

But each country has its own secrets and tricks for preparing and serving this dish.

Turkish version

Cooks in Turkey put a special filling in the middle of the cutlet, which consists of two simple ingredients. Two more products are used at will – they complement the dish. Turkish cooks add:

  • walnuts;
  • green;
  • garlic;
  • olive oil.

First, nuts and greens are combined in equal proportions. The ingredients are seasoned with garlic and olive oil. The resulting gruel is wrapped in minced meat.

Subtleties of cooking

The cooks do not use breading. The cutlets are fried in a frying pan until done. To prevent the cutlets from falling apart in the frying pan, the workpiece is first beaten on the table several times.
