Zrazy is a Slavic dish that consists of cutlets or a roll with filling.
The filling can be very diverse. For example, cooks use minced meat, meat, mushrooms, vegetables.
Many housewives prepare this dish. For some, it is in the category of "favorite recipes", and some cook zrazy when they want to surprise their loved ones and diversify the menu.
However, cooks often face a problem: zrazy crack and fall apart during cooking.
At first glance, it seems that this dish is easy to prepare. You just need to form a flat cake from the puree, put the filling inside, fix the edges and fry. The last stage is where the problems begin, and there may be several reasons for them.
1. Often the cause is a potato variety that is not suitable for mashed potatoes.
2. The puree turned out too liquid. It will not be possible to form zrazy from such a preparation.
3. Because the puree is too dry, the cutlets crack.
4. Potatoes were not boiled in their skins. This point is perhaps the main secret of the ideal dish. For zrazy, potatoes are boiled only in their skins.
5. Experienced cooks do not recommend adding milk to the puree. If the preparation is still too liquid, then 2-3 tablespoons of flour will “glue” the base for the dish.
