A light yogurt-based dressing that goes well with any vegetable salad.
Surprisingly, if you pour this sauce over regular lettuce leaves without adding any other ingredients, they alone will turn into a delicious salad.

The yogurt for this recipe should be thick. If the mixture seems too thin, strain the yogurt through a triple layer of cheesecloth in a sieve.
After 20-30 minutes, the excess liquid will drain and you can begin preparing the dressing.
Add ground black pepper, pressed garlic and Italian herbs to the yogurt.
Next in line are lemon juice and lemon zest, but the last ingredient is variable and can be added as desired.
Pour in the soy sauce and stir the dressing until smooth.
The finished sauce can be stored in the refrigerator in a glass jar for 2-3 days.
