If it so happens that pure sugar has long been excluded from the diet, it can be replaced with honey. This recipe is designed for rolling up three liters of birch sap.
It is also worth knowing that the later the juice is collected, the less sugar it contains.
First of all, the juice needs to be strained through cheesecloth.
Raisins are washed, dried, and added to juice along with sugar (honey) and citrus fruits or dried zest.
Mix everything, cover the jar with a dry cloth and leave for 24 hours at room temperature.
During this time, the juice should steep, after which it remains to pour it into sterilized jars, roll them up and store them in a cool place - a cellar or in the refrigerator.
In this case, the shelf life will be 6 months.
