Vegetables can be used to make soup, stew and any suitable side dish. During fasting days or on a diet, the task becomes more complicated and you have to use your imagination.
For example, you can try making bean cutlets.
The beans need to be soaked in water overnight, then rinsed, covered with water and put on the fire to cook.
When the water boils, turn down the heat and cook for another 30-40 minutes until the beans are soft. Add salt at the end of cooking.
The carrots need to be washed, peeled, grated, and the onion cut into cubes.
Then fry the vegetables in vegetable oil until soft.
The beans need to be strained, the remaining liquid drained and, together with the onion and carrots, chopped into a puree in a blender.
From this mass you need to form cutlets, bread them in flour and fry them in vegetable oil for 3-4 minutes on each side.
You can serve it with vegetables or your favorite sauces.
