To prepare you will need:

  • 300-400 g carrots;
  • 200 g canned or dried fruit;
  • peeled nuts (hazelnuts or walnuts);
  • 130-150 g flour;
  • sugar, cinnamon, salt to taste;
  • vegetable oil.

How to cook

The root vegetables need to be washed, peeled and grated on a coarse grater, and then the vegetable mass needs to be salted and cinnamon, nuts and sugar added.

If you use dried fruits (prunes or dried apricots), they need to be soaked in hot water beforehand. Canned fruits are cut and added to the carrot mixture.

Mix the base with your hands, coat the baking dish with vegetable oil and spread it out, distributing it evenly over the entire surface.

Preheat the oven to 160 degrees Celsius and bake the carrot cake for an hour and a quarter.

Then take it out of the oven, wait for it to cool, remove it from the mold and serve.
