Why pancakes are fluffy only in a frying pan: what the housewife did wrong

Pancakes in a frying pan are pleasing to the eye until they are removed and fall into the plate, turning into unattractive flat cakes.

There are few reasons for this with pancakes, and in order not to upset your family with failures and not to be upset yourself, we suggest that you familiarize yourself with the reasons.

There are not many of them, and it won't be hard to remember. Surely any cook has done this.

The pancakes will not turn out fluffy if:

1. Knead the dough using cold ingredients – milk, whey, kefir or eggs.

2. If you add more flour to the future dough than the recipe requires. It happens when the level of flour gluten leaves much to be desired. But this is not the case when cooks add flour directly from the bag and by eye.

3. Adding a lot of sugar to the dough does not mean you will bake delicious pancakes. Sugar is the very last ingredient on the list, on which the taste of the dish depends. It is better to use it to a minimum, because it makes the dough heavier.

4. If you mix the dough too long. But you don't need to beat the pancake mixture with a mixer at all. It's better to mix it with a fork or a whisk.

5. If you forget to add soda. It is not needed only if the dough is yeast.

6. If you don't let the dough sit and rush to start baking pancakes right away, you can also get flat cakes instead of fluffy pancakes. Let it sit for 15-20 minutes, and then don't stir it and get to work.

But you need to bake pancakes on medium heat. High temperature will cause the pancakes to burn quickly, and they are unlikely to rise in a cold frying pan.
