When pancakes with cottage cheese filling become so boring that they don’t bring joy, even if the cottage cheese occasionally contains raisins or candied fruit, it’s time to diversify the recipe.
This recipe will probably satisfy the needs of even the most demanding gourmet.
The cottage cheese must be rubbed through a sieve or beaten with a blender to obtain a homogeneous mass.
It needs to be mixed with powdered sugar – add to taste.
Separately, you need to prepare the cherries. To do this, pour the cognac into a suitable container, bring to a boil, add 4 tablespoons of water, 1 tablespoon of powdered sugar, cloves and stir.
You need to soak the cherries in this syrup (if you use frozen ones, you need to defrost them first) and cook for 5 minutes.
You won't need any syrup for the cottage cheese filling, but you need to strain the cherries and mix them with the cottage cheese mixture so that the berries don't fall apart.
After that, all that's left is to bake pancakes and fill them with cottage cheese. No need to fry them.
Bon appetit!
