What's the secret to fluffy pancakes: the perfect recipe for "thick" pancakes

To prepare fluffy yeast-free pancakes for breakfast, you don’t need any special ingredients.

To do this you need to take:

  • 250 g kefir;
  • 1 egg;
  • 220-240 g flour;
  • 1 tablespoon sugar;
  • ¼ teaspoon salt;
  • ¼ teaspoon of soda;
  • And, of course, vegetable oil for frying.

The main secret of that very “fluffiness” is not in the soda, as many might think, but in the temperature of the ingredients.

First, heat the kefir on the stove or in the microwave. No need to boil it – a temperature of about 40 degrees is enough. If the product curdles a little – no problem, just stir it and it will become homogeneous again.

To warm up an egg, simply place it in hot water for a few minutes.

Once you have finished preparing the ingredients, you can start kneading the dough.

In a bowl, combine the egg, sugar and salt and stir until the dry ingredients dissolve. Then add the kefir, stir and add enough flour to make the dough resemble thick sour cream.

At the very end, add the baking soda and stir until it is evenly distributed.

Now you can put the frying pan on the fire and pour in the oil. When the fat is hot enough, start frying.

On medium heat, this process will take about a couple of minutes on each side. It is better to eat these pancakes hot from the oven - then they are the most delicious.
