There is a quick and quite effective recipe for pancakes that allows you to do without flour.
Moreover, the pancakes will turn out so fluffy that you will hardly want to knead the dough with flour.
After preheating the ingredients to room temperature, crack the eggs into a bowl, add sugar and salt, and then mix until smooth.
Then slowly pour warm kefir into the prepared mixture, simultaneously whisking everything with a whisk or fork.
Now you can add semolina.
Unlike flour, semolina needs a little more time to start working, so the kneaded dough must be left for 15-30 minutes, covering the bowl with cling film.
Afterwards, you can heat up a frying pan with vegetable oil and bake pancakes, which, thanks to the semolina, will turn out very fluffy and will not fall after they end up on the plate.
Bon appetit!
