3 recipes for light salads without mayonnaise: just what you need for the festive table

If you are tired of getting up from the holiday table with a feeling of heaviness in your stomach, then perhaps it is time to replace your usual mayonnaise salads with lighter options.

Expert of the online publication BelNovosti, chef Yulia Arkhipova shared several salad recipes that do not include mayonnaise. You will be able to enjoy every bite without feeling guilty.

Christmas wreath

Wash and dry the lettuce leaves (you can also use arugula, spinach or a mixture). Arrange them on a large plate in the shape of a wreath.

Cut 2 boiled beets into wedges or thin slices and place them on the lettuce leaves. The wedges of 2 tangerines should also be evenly distributed around the circle.

Break 100 g of feta cheese into small pieces and sprinkle them over the dish. Add a handful of pecans, and for the dressing, mix in a bowl 3 tablespoons of olive oil, 1 tablespoon of lemon juice, 1 teaspoon of honey, salt and pepper to taste.

Drizzle this dressing over the salad or serve it on the side.

Meat salad with apple

Wash 150 g of salad leaves (lettuce, radicchio or a mixture will do), dry them and arrange them on a plate.

Cut 8-10 cherry tomatoes in half, cut 1 small carrot into thin strips or grate on a Korean carrot grater, and cut the green apple into small cubes (sprinkle it with lemon juice to prevent it from browning).

Cut 100 g of mozzarella or other soft cheese into small cubes, add it to the vegetables and mix the salad.

Thinly slice 100 g of dried or baked meat (beef, boiled pork) or roll it into rolls and place on top of the salad.

Make a dressing by combining 3 tablespoons olive oil, 1 tablespoon lemon juice, salt and pepper, and drizzle over the salad before serving or serve separately.

Festive salad with avocado

Wash and dry 100 g of arugula, spinach, lettuce or salad mix. Transfer the salad to a plate and top with 8-10 halved cherry tomatoes.

Peel 1 avocado, cut into cubes or lightly mash. Divide 100 g of soft cheese (curd, ricotta) into small pieces and place them on the vegetables.

Sprinkle the salad with 2 tablespoons of nuts, chopped and toasted in a dry frying pan (almonds or walnuts will do).

To make the dressing, combine 2 tablespoons olive oil, 1 tablespoon lemon juice, 1 teaspoon honey, salt and pepper in a bowl. Drizzle the dressing over the salad before serving.
